Each lot is aged separately based on village, vineyard, grower, and grape variety before final blending. The Champagnes are then aged and hand-riddled in the deep, cool cellars beneath the Epernay château, providing ideal conditions for the development of complexity and fine bubbles. Pol Roger ages all their Champagnes longer than legally required, ensuring that each bottle, produced entirely in-house, is a marriage of power and elegance.
