De pluk gebeurt volledig manueel en dit over verschillende weken (tussen midden Augustus en midden Oktober). De druiven worden geperst, met nadien een fermentatie op inoxen cuves. De vergisting stopt na 7 dagen door toevoeging van zuivere alcohol. Nadien is er een opwarming tussen de 40 en 50 graden gedurende 3 maanden. Voor deze Reserve wordt niets aan het toeval overgelaten en bij de blend gaat men op zoek naar de stijl waar de suikers en zuren elkaar het best in balans houden. Er is een opvoeding van 5 jaar op houten vaten. Amber/goudkleurig met in de neus citrus en noten. In de mond komen de restjes van sinaas en citrusvruchten met een rijke finale die zoet is, maar met fijne zuren in de afdronk. Serveren in een fijn glas op keldertemperatuur. Veel plezier! Santé!
